Anti-inflammatory Salad

One of the best things you can do for your overall health is to eat more anti inflammatory foods. Eating healthy does not have to be complicated – so don’t make it! This has been my simple go-to salad lately that I have been eating on repeat! My life mantra has always been “eat good, feel good.” This salad is so easy to throw together and is loaded with antioxidants, fiber and omega 3’s – all the things that make for a healthy immune system and happy gut. People say happy wife, happy life. Well I take it a step further and say happy gut, happy wife, happy life. I believe a healthy gut is the foundation of a healthy body and immune system. Everything you eat is either pushing you towards health or disease. The choice is yours! Choose health!

I love shopping at Trader Joe’s. If you don’t have one near you then might I suggest that you just go ahead and move. Just kidding. On a serious note – from logo typography to shopping experience I would give Trader Joe’s a 10/10. I love how they keep everything simple and prices reasonable. And everyone that works there is just happy and makes for a pleasant shopping experience. They also don’t use any artificial colors in any of their products. One less thing to worry about when reading labels! TJ’s also carries a lot of organic products and produce. I always eat organic when possible!

Now for the salad, first you are going to want to mix the kale with the olive oil, lemon and ground flaxseed. Go ahead and give it a nice massage- you know the kind you wish your spouse was giving you right about now. Next chop all of the veggies up. I usually chop enough for a few days in advance. I also cook chicken breast every threeish days so I always have some ready to go for lunches and dinners. A huge part of success when it comes to eating healthier (or doing just about anything in life) just boils down to being better prepared. If you have healthy food prepped and ready to rock and roll, you are making it that much easier to choose the healthier option. A major life hack, especially when it comes to food, is figuring out how to make the healthiest option the easiest option. Figure that one out and no matter what the goal is- you’ll be well on your way.

Once the kale is nice and relaxed, much more relaxed than I’m sure you are right about now, just throw in the chopped vegetables, avocado, kidney beans and chicken. Toss together, add salt and pepper to taste and viola! Lunch is served.

Recipe:

  • tuscan kale – chopped (75g)
  • EVOO (2 TBSP)
  • ground flaxseed (1 TBSP)
  • 1/2-1 lemon – juiced
  • grape tomatoes (50g)
  • celery (50g)
  • cucumbers (50g)
  • carrots (50g)
  • avocado (30g)
  • red kidney beans (50g)
  • chicken breast (4 oz)
  • S&P to taste

Calories: 460 Protein: 34 Carbs: 28 Fats: 24
