One of the best things you can do for your overall health is to eat more anti inflammatory foods. Eating healthy does not have to be complicated – so don’t make it! This has been my simple go-to salad lately that I have been eating on repeat! My life mantra has always been “eat good, feel good.” This salad is so easy to throw together and is loaded with antioxidants, fiber and omega 3’s – all the things that make for a healthy immune system and happy gut. I believe a healthy gut is the foundation of a healthy body and immune system. Everything you eat is either pushing you towards health or disease. The choice is yours! Choose health!

The recipe is super simple you can throw this salad together in less than 5 mins! First mix the kale with the olive oil, lemon and ground flaxseed. Make sure to give the kale a nice massage – get in there with both hand! Next chop all of the veggies up if you haven’t already – I usually chop enough for a few days in advance. I also cook chicken breast (or lean form of protien) every threeish days so I always have some ready to go for lunches and dinners. A huge part of success when it comes to eating healthier just boils down to being better prepared. If you have healthy food prepped and ready to rock and roll, you are making it that much easier to choose the healthier option when you are hangry or in a pinch. Finding ways to make the healthiest option the easiest option is a major life hack when it comes to living a healthier lifestyle.
Once you are done massaging the kale, just throw in the chopped vegetables, avocado, kidney beans and chicken. Toss together, add salt and pepper to taste and viola! Lunch is served.
